Crostini & Bruschette Recipes

I hope you had a wonderful and peaceful Christmas!

I have been kind of busy, as I think most of you have been too. The holidays have not given me much time to write on my blog or have fun in the kitchen because there's been so many friends, family and unexpected guests gathering for the celebrations. This is why I've been cooking so many Crostini and Bruschette! They're so useful for those last-minute snacks and appetizers, or for a fast meal accompanied with some soup or salad.

       

       

Crostini and Bruschetta are one of the most popular Italian snacks generally used as Antipasti. They consist of slices of lightly toasted bread with a variety of toppings.

 

What's the difference between Crostini & Bruschetta?

Crostini are small pieces of baked bread or little toasts topped with a variety of ingredients like cheese, pates, pesto, vegetables, meat, or seafood.

Bruschetta is a larger piece of bread that is grilled or toasted and can be rubbed with garlic and Extra Virgin Olive Oil, or topped like a crostini.

All you need is fresh bread, like a baguette, A&A Garlic Olive Oil and a few minutes to create these delectable and fun snacks!

My favorite bruschetta?...ALL of them!!

Specially bruschetta al Pomodoro, bruschetta alla Caprese, di melenzane, di cannellini, and di sundried tomatoes pesto. Today I'm sharing bruschetta al Pomodoro, and bruschetta con alici (anchovies), but I will share the rest later with you. Meanwhile let your imagination fly and be creative while making them, you will surprise of all the wonderful toppings you can use with them.

    

Basic Bruschetta Recipe

  • Preheat oven to 350 F.
  • Slice your bread in slices.
  • Drizzle the slices with A&A Garlic EVOO and bake them for around 8 minutes or until golden.
  • Top them with your favorite topping and serve warm. 
  
    

Bruschetta with Tomato

This is my dad's favorite!!

 

Bruschetta with Anchovies

  • Toss together: 16 anchovy fillets,
  • 1 tbsp A&A EVOO or A&A Garlic Infused EVOO,
  • 1 tbsp rinsed salted capers,
  • 1 tbsp lemon juice (optional).
